Ma Po Tofu
麻婆豆腐
材料:
1. 豆腐 280g
2. 豬絞肉 120g
3. 醃肉材料:
- 醬油1大匙
- 水2大匙
- 花椒粉1小匙
- 玉米粉1小匙
4. 調味料:
- 辣豆瓣醬2大匙
- 水1/3杯
- 醬油2小匙
- 糖1小匙
5. 花椒粒1大匙
6. 油1.5大匙
7. 蒜末2小匙
8. 地瓜粉1小匙
9. 醬油1小匙
10. 花椒粉1小匙
11. 蔥3支
12. 鹽1小匙
作法:
💟1. 醃肉末:絞肉用醬油、水、花椒粉、少許地瓜粉抓醃約半小時。
💟2. 準備調味料:辣豆瓣醬+水+醬油+糖
💟3. 滾水加入豆腐切塊,並加入少許的鹽。
💟4. 鍋裡放花椒粒,以小火乾炒一下,飄出花椒麻香後,
加入1.5倍的油爆香花椒粒。
💟5. 用濾網(或煮水餃瀝水那種)瀝出炒鍋裡的花椒粒,
轉中火放入絞肉及調味料拌炒3分鐘。
💟6. 加入三匙豆腐水,再將膨脹的豆腐加入。
💟7. 加入適量蒜末拌炒5分鐘後關火,
加入地瓜粉水勾芡(地瓜粉:水=1:3)。
💟8. 開火加入一小匙醬油、花椒粉及蔥花拌炒後即可起鍋。
Ingredient:
1. 280 g Tofu
2. 120 g Ground Pork
3. Marinade for Ground pork:
- 1 Tbsp Soy Sauce
- 2 Tbsp Water
- 1 tsp Chinese Prickly Ash Powder(Szechuan pepper)
- 1 tsp Cornstarch
4. Sauce:
- 2 Tbsp Chili Bean Paste
- 1/3 cup Water
- 2 tsp Soy Sauce
- 1 tsp Sugar
5. 1 Tbsp Chinese Prickly Ash(Szechuan pepper)
6. 1.5 Tbsp Oil
7. 2 tsp Chopped Garlic
8. 1 tsp Cornstarch
9. 1 tsp Soy Sauce
10. 1 tsp Chinese Prickly Ash Powder(Szechuan pepper)
11. 3 Green Onions
12. 1 tsp Salt
Preparation:
💟1. Mix marinade ingredients and marinate pork for 30 mins.
💟2. Mix Sauce.
💟3. Cut the Tofu into square cubes,
and drop into boiling water and salt.
💟4. Heat wok, add the Chinese Szechuan pepper,
then add 1.5 Tbsp oil when smell the Szechuan pepper.
💟5. Remove the Chinese Prickly Ash seed,
put the oil into a small bowl.
💟6. Turn down the heat, add the marinated pork, cook for 5 mins,
then add the Chinese Szechuan pepper oil and sauce,
cook for 3 mins.
💟7. Add 3 Tbsp the boiling tofu water, then add tofu.
💟8. Add chopped garlic and cook for 5 mins.
Then turn off the heat and add the cornstarch water.
( cornstarch : water = 1 : 3 )
💟9. Turn on the heat, add soy sauce(option),
add Chinese Szechuan pepper powder and green onions.
